We had a very monumental occasion last week. Our little man started daycare. We had been for a few trial-runs but Friday was the first full day and there were tears from him and Mummy.

I rang a couple of hours later though and he was having a ball. This Friday he settled before I’d even walked out the door and had another good (but a little teary – could have been the 25 minute sleep all day) which makes this mumma very happy.

He’s just going one day a week now which is perfect for me to get some serious work (and chores) done.

We, ok I, have been a little bit obsessed with pancakes in recent weeks. Ever since I discovered that there is such an enormous array of healthy recipes out there, I’ve sort of made it my mission (ok excuse) to make as many of them as possible.

Will isn’t a huge fan but Ollie and I have been enjoying them every weekend and sometimes during the week too. Last Saturday it was oat and ricotta pancakes with apple berry sauce.

Ollie had a funny face version with sauce on the side which he ate with his spoon. At least he enjoyed it.

After pancakes it was time to get baking for Mother’s Day – banana bread for Mum, melting moments for my grandma and a caramel chocolate cake for lunch dessert. In an attempt to be organised and efficient about the whole thing I measured out all the ingredients before getting started.

I have a feeling I must have gone wrong somewhere along the way because the cake turned out flat as a tack and like a dried out brownie despite only being in the oven for ¼ of the recommended time.

Not to worry, I whipped up a flourless chocolate cake as a backup and remembered why I love it so much.

On Sunday morning I was treated to pressies and cuddles in bed with my little man and then we headed out for the Mother’s Day Classic walk with Mum and my little sister. It was the most beautiful morning and it always feels a bit special to be a part of something like a fun run/walk.

There were so many people walking with tribute signs on their back it makes you realise how lucky you are to have the people you love around you and that you should make the most of every minute.

Here’s my wonderful Mum posing with the chocolate cake. I topped it with loads of berries and we served it with ice-cream. It was a hit.

Pancakes were on the agenda again later in the week but this time I had a trick up my sleeve. Would you believe I have had this cupcake batter dispenser in the cupboard for years and have actually never used it (I forgot about it!). I was at a friend’s last week and she was using one for pancakes.

Wow did it make things easier and so much prettier too – it turned out perfectly round pancakes which, if you look at Ollie’s face pancake above, you’ll see I’ve never been good at.

For the last 5 years, our ‘table’ has been an old bathroom door of Mum and Dad’s on trestles. While it has served us brilliantly and looked rather rustic, it was time we upgraded.

Presenting – the prettiest table I’ve ever seen. I have been searching for a long (2.8m) table for years to no avail. My very wonderful parents offered the table as a 30th present and we had it made by the super clever Jamie from Urbane East Building.

He made us a few things for our wedding and was the first person who came to mind when I decided the table of my dreams just didn’t exist in the shops.

My Sister wanted to see the table and has also been requesting I make her pancakes since my obsession started so we combined the two for a Wednesday breakfast date. Surprisingly Ollie ate all the fruit and yoghurt toppings and not one bite of pancake.

I was a bit proud of my Wednesday night dinner creation. The week before I made a throw-it-all-in-and-hope-for-the-best slow cooker dinner and it was bland to say the least. Not wanting to waste it, I divided it into portions and threw it in the freezer.

Wednesday night I sautéed a chopped onion with some curry powder and added the bland curry, whipped up some pastry (with yoghurt instead of sour cream because that’s all I had) and curried beef pies were born. I ate three. Don’t judge me, I’m pregnant and hungry.
